Overview

Fuego Pizza Company, nestled at 2601 S Lemay Ave Unit 9 in Fort Collins, Colorado, delivers an exceptional pizza experience that stands out in a crowded market. This spot captures the essence of iconic pizza styles, including Detroit and New York, with a clear passion for fresh, high-quality ingredients that elevate every bite.

From the moment you walk in, the clean, inviting space paired with friendly staff—especially the approachable owner—sets a comfortable tone. The ordering process is straightforward, done at the counter, aligning with modern casual dining trends while maintaining a personal touch. The atmosphere strikes a balance between relaxed and refined, appealing to both locals looking for a Friday night favorite and newcomers seeking authentic, gourmet pizza in Northern Colorado.

One of the true highlights is their crust craftsmanship. Whether you opt for the deep-dish or the Detroit style, you’ll find a perfect marriage of crispy edges and chewy, doughy interiors that linger on the palate. This crust is frequently praised by diners, establishing Fuego not just as another pizza joint but as a destination for crust enthusiasts.

The toppings and sauces complement the crust beautifully. Signature items, such as the Fuego pepperoni with whipped ricotta, showcase a thoughtful layering of flavors without overwhelming the taste buds. Freshness is a given, and it shows—not just in the pizzas but also in their expanding menu of sandwiches, made on freshly baked focaccia bread that’s worth the wait. These sandwiches add another dimension to their offerings, drawing in food lovers beyond just pizza aficionados.

The location itself adds to the charm. Positioned next to the 5003 Distillery in Scotch Pines, Fuego offers a unique experience where guests can enjoy hand-crafted cocktails alongside their pizza, or even carry their slices into the bar next door. This synergy between food and drink creates a social environment ideal for casual gatherings and weekend outings.

While most reviews are overwhelmingly positive, some minor areas like beverage chiller management and complimentary tap water options leave room for growth. Despite this, the quality and flavor stand out. Dishes like the garlic knots have been described as transcendent, reinforcing the kitchen’s attention to detail and care.

Fuego Pizza Company targets a diverse audience—from East Coast transplants craving authentic pizza, to local food enthusiasts eager to explore inventive flavors and textures. It’s clear that this restaurant is crafting more than just meals; it’s building a culinary community rooted in passion, freshness, and bold flavor profiles.

In sum, Fuego Pizza Company offers a focused, elevated pizza and sandwich experience that rewards patience and pleases a spectrum of palates. Whether you seek the unique crunch of a Detroit slice or the satisfying heft of a carefully layered sandwich, this Fort Collins gem promises to deliver on taste and atmosphere alike. A visit here is a chance to savor thoughtfully prepared food in a warm, inviting setting—an easy choice for pizza aficionados and casual diners alike.

Detroit or New York style - you won’t be disappointed. Super fresh ingredients. Owner was a super friendly guy too. Bonus …. buy pizza, then take it over to the cocktail bar next door!

have been wanting to try this new place for awhile! overall good experience, and I'll be back! while I wanted to give this place 5 stars, there were a couple issues that they'll hopefully be able to improve upon as they get more comfortable in that space. i was bothered by the lack of free tap water and the fact that the beverages we did purchase were not cold and we were not offered any cup or ice. the Fuego roni pizza was great crust but a touch too greasy for me. the highlight of the night was that the garlic knots were truly transcendent! overall a great little place that I'll be back to!

New restaurant review. Update: 6/9/25 They have now started making these specialty sandwiches.. these are next level.. the freshly baked the focaccia bread so it takes a little time... its not like ordering from a regular sandwich shop where the bread is pre-made most of the time... but wow was it worth the wait.. the picture in added was of the Madrid... they have a few others and if you can't want for fresh fresh bread they have good rolls from the bread chic that they use also. Good stuff and the flavor profiles... wowzer....... Ordered their deep dish pizza today. Excellent execution. THE CRUST, THE CRUST, THE CRUST.... For those that are looking for that perfect mix of crispy edges with that soft, doughy leave the impressions of your teeth kind of crust this is it. The cheese works well and the fresh toppings are just the cherry on top so to speak. Bake and cooling time is around 35 minutes for a deep dish which is actually faster than most Chicago or Detroit style pizza places. This is gourmet level stuff people so be patient and you will be rewarded. Initial review appears below. Tried this new place today. Ordered one of their multi-topping pizzas off their menu. It was very good. Ingredients are fresh. Cheese is nothing memorable however the crust... that crust is among the best I have ever had on a pizza anywhere. Crunchy on the outside and chewy like dough bread on the inside. Wow.... They also do a Detroit style pizza as well and we saw a few people in the restaurant with those at their tables. I overheard that they may be expanding their menu to include fresh sandwiches and with the way they make bread it should be amazing. The place is quiet, it's clean and the staff is friendly. Yes you order at the counter but that seems to be the norm these days which is fine. Pizza is always such a subjective proposition for people these days but I can tell you that having been all over Northern Colorado trying pizza joints this one is up there. Give it a try.. if nothing else.. to eat them bones.

This is the best pizza we’ve had in Fort Collins in our five years here. We’ve tried all the other spots in town and Fuego far surpasses them. The ingredients are all super fresh - and we’re obsessed with the cupped pepperoni and whipped ricotta. Their sandwiches are also massive and the focaccia is unreal. Do yourself a favor and give this spot a try, you won’t regret it! It’s right next to 5003 Distillery in Scotch Pines and you can go in there for drinks and bring in the pizza from next door or have them bring it over to you. Our new favorite Friday night spot!!

The pizza was excellent! The dough was flavorful and the sauce was on point. Coming from the East it isn't easy to find pizza comparable here, but this did just that. We had to take a picture of another diner's sandwich because it looked amazing and they said it was. We will return very soon to try one of their New York Deli Sandwiches.

I think we have finally found the best pizza spot in town! We came in with high expectations based on other reviews, but were still blown away. Very fresh ingredients, friendly staff, and perfectly made pizza. We got the Greek Goddess and Fuego Roni, both absolutely delicious. Well worth the price, we'll be back again soon!

I’m an east coast pizza snob but I can assure you this pizza is fabulous! The dough is soft, flavorful, fragrant and makes you crave more! I ate 5 slices when normally I can only eat 2 haha the ingredients are fresh and I would definitely come back! Not only that but we spoke to the owner who is very nice. This is a family run business so please support them! They are all working hard to live out their pizza dream! We will definitely be regulars as their pizza is delicious! We ordered the Margarita and the Fuego, Fuego was incredibly good if you like Buffalo sauce, ranch, jalepeno and chicken. Between the two pizzas and 2 of us we had a whole pizza to take home of leftovers so they are large for the price you pay it’s worth it!

We decided to try a new pizza place in FOCO. I can say that being from the East Coast I struggle constantly to find pizza worth eating in Colorado most of the time. FUEGO Pizza is just out of bounds good!! The pizza and the sandwich are so so good and this is definitely a place we will be frequently visiting. If you want to try a great place for pizza and sandwiches in Northern Colorado this is the place!!
